How to Make Perfect Macarons: A Beginner’s Guide

Macarons are an iconic French pastry that has become a favorite around the world for their delicate texture and vibrant colors. However, mastering macarons can be a bit challenging, especially for beginners.

This guide will walk you through the essential steps to create perfect macarons at home, from preparing the ingredients to achieving the right consistency.

1. Gather Your Ingredients

Macarons require only a few basic ingredients, but they must be prepared correctly. Here’s what you’ll need:

  • 1 cup powdered sugar
  • 1 cup almond flour
  • 2 large egg whites (at room temperature)
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar (optional, for stabilizing the egg whites)
  • Gel food coloring (optional, for colorful macarons)

For the filling, you can use buttercream, ganache, or jam, depending on your preference.

2. Prepare the Dry Ingredients

Start by sifting the powdered sugar and almond flour together in a bowl. This is an essential step to avoid lumps and to ensure the smooth texture of your macaron shells. Sifting also helps create a more delicate crumb in the macarons.

Once sifted, set the mixture aside while you prepare the egg whites.

3. Whip the Egg Whites

In a clean, dry mixing bowl, beat the egg whites until they form soft peaks. If you’re using cream of tartar, add it at the beginning of the whipping process to help stabilize the egg whites. Gradually add the granulated sugar as you continue to beat the egg whites, increasing the speed once the sugar is added. Beat until the mixture forms stiff peaks.

You should be able to turn the bowl upside down without the egg whites moving. This is the key to getting the right texture for your macaron shells.

4. Macaronage: Folding the Mixture

Once the egg whites are ready, add the sifted almond flour and powdered sugar mixture to the meringue. Gently fold the ingredients together using a spatula, being careful not to deflate the meringue too much. This process is called “macaronage.”

Continue folding until the batter flows like thick ribbon when you lift the spatula. It should be smooth and slightly glossy, with no lumps. Be careful not to over-mix, as this can cause the macarons to be flat and misshapen.

5. Pipe the Macarons

Prepare a baking sheet with parchment paper or a silicone baking mat. Place your macaron batter in a piping bag fitted with a round tip. Pipe small, even circles onto the baking sheet, about 1.5 inches in diameter. Leave some space between each circle to allow for spreading.

After piping, tap the baking sheet firmly against the counter to release any air bubbles and to help the macarons settle into their shape. Let the macarons rest for 20 to 30 minutes at room temperature. The batter should form a skin on top, which will prevent the macaron from cracking during baking.

6. Bake the Macarons

Preheat your oven to 300°F (150°C). Bake the macarons in the preheated oven for 12 to 15 minutes. Keep an eye on them to ensure they don’t over-bake, as the macaron shells should remain soft inside while having a smooth, slightly crisp exterior.

To check if they are done, gently tap the side of the shell. It should release easily from the parchment paper and feel firm on the outside.

7. Cool the Macarons

Once baked, allow the macarons to cool completely on the baking sheet before attempting to remove them. They will stick initially, but once they are cool, they should come off easily.

8. Fill the Macarons

Once the macaron shells are cool, it’s time to assemble them. Pair up shells of similar size and pipe a small amount of your desired filling (buttercream, ganache, or jam) onto one shell. Gently press the other shell on top to create a sandwich. Be careful not to press too hard, as the macarons can crack.

9. Let the Macarons Mature

For the best flavor and texture, allow the filled macarons to mature in the fridge for at least 24 hours before serving. This helps the flavors to meld together, and the shells will become softer and chewier.

10. Enjoy Your Perfect Macarons

Once your macarons have matured, they are ready to enjoy! These delicate treats are perfect for tea parties, celebrations, or as a sweet indulgence.

Macarons can be stored in an airtight container for up to 5 days in the fridge, or you can freeze them for longer storage.
